It would be helpful to know where to get ginger palm sugar, or how to make it.
- I used honey w juice and some pulp from 1 tbsp fresh ginger + seeds from 1/2 a vanilla pod
- Made the night before, served room temp at a 10am meeting - raves
- Next time I'll try using chestnut honey from Tuscany, maybe leaving the cayene out. I'll make a double batch and try it on shrimp, too. I actually think it could make old socks taste fabulous. Easy, different but not weird, well worth the modest effort.

Today I'm going to prepare the pineapple as above, but with brown sugar and cinnamon, mixed with chopped bananas, then bake them. I'll serve with 0% fat Yogurt. This will follow a Mexican dinner. Bon appetit!!

I made ginger syrup with 1/2 C Demerara sugar, 1/2 C water and 5 one inch pieces of fresh ginger sliced. Bring to a boil and simmer 20 minutes. Great for this, or saved for mixed drinks as ginger simple syrup. I couldn't stop checking it with my tasting spoon. Yum.

The picture shows the grilled quartered pineapple sliced, which is why you see sides that aren't grilled. All the sides of the wedges are grilled.

Can I use agave nectar in lieu of ginger palm sugar or honey?

Wish I knew where to find ginger honey... used regular ol’ clover honey instead. I also used a pinch of spicy paprika instead of cayenne and it worked brilliantly; might sub in Chinese five-spice or garam marsala next time.

I did not have time to make a simple syrup with ginger but I think it would be cool to keep as a staple in the refrig. I had ginger in the freezer. I grated it in the frozen state on the smallest holes of a grater; it was almost a powder. Added honey and the other ingredients. Thought it would not be enough basting sauce. It was and pineapple lovers loved it. You can adjust the amount of ginger according to personal preference.

I plan to use honey, possibly orange zest, and either a pinch of smoked paprika or maybe smoked salt, which will work with the sweetness of the honey. Or without smoked I have my garden lavender flowers, with butter not oil.

Grill needs to be really well oiled. The honey sticks!

Made this tonight for my family. Came out perfect. I used honey, but added some ground ginger to give it the ginger it needed. Nice caramelization and balance of flavors.

Very good. Used Canola oil. Cooked straight on grill. Next time make 2x sauce for more basting & reheating & cut in more uniform slices.

It would also be helpful to know what you mean by, "Cook for 6 to 8 minutes per side." The picture doesn't show all 4 sides grilled. Please explain because the recipe sounds intriguing.

Intriguing combination. I am very eager to try it.
Q: the quartered pineapple now has 3 sides. Grilling at 6-8 minutes/side, is that 18-24 minutes?
Q: I have a gas grill and gas oven. Can this be done under the broiler?
